1 of 2 of our steaks were cook correctly. Food took 45 min to come out, drinks too 10-15 per order as well. Steak that was ordered medium rare, came out well done, offered to take another 45 min to recook. I declined and was only offered a dessert for the poor steak. Then they brought out the dessert To Go and was missing parts of it, waiter said of well sometimes they get burned and forget them. Lo and behold 5 min later we had the missing items.
So we had poor food and poor service from a Steakhouse that is supposed to be fine dining. Spend your money elsewhere.

We had the pleasure of savoring their Scallops, and they were nothing short of amazing! Even Chef Gordon Ramsay would be impressed. The Republic of Texas has swiftly become my preferred restaurant in Corpus Christi. I implore you to try their Filet Mignon; it's simply flawless! And if you happen to have room left, their cheesecake is a delightful conclusion to the meal.

I wholeheartedly recommend this restaurant to anyone in search of a memorable date night or simply looking to relish an exceptional meal.

We arrived a little later in the evening and didn't have a reservation for dinner. We sat at a table in the bar area. The music and musician was fabulous. Our server took our beverage order and brought them to us in a reasonable time. We put in our dinner order and waited an hour for our food. We were not offered drink refills, nor bread for the table. I asked for bread after seeing another table get a loaf and was told unfortunately we are sold out! After an hour wait. The Cesar salad was wilted and looked like it had been sitting for hours. The au gratin potatoes were bland. The rib eye steak wasn't actually rib eye at all, it tasted like new york strip deguised in some seasoned bread crumbs. We had to ask for Silverware and napkins twice! Server disappeared and was waiting on other tables around us. We had no salt or pepper. The food was horrible! Service was sub par. We drove hours to stay at this omni for the annular eclipse and were looking forward to a special night having a fabulous dinner. Both of us were totally disappointed! We heard the state of Texas has the best Steaks but much to our dismay found it not true! Especially Republic of Texas Bar and Grill on the top floor at the Omni Hotel in Corpus Cristi! Save your $$$$$ and go elsewhere. Very dissatisfied we wasted our money, and time at this over rated restaurant.

This is just all around a super place to dine. The Restaurant has a nice vibe to it. The staff is super friendly, attentive and professional.
The food and drinks lists are extensive - the courses to choose from are sooo delicious.
The food tasted as good as we hoped and expected. And our whole experience at the restaurant was in top. We finished our dinner with cocktails at the bar - also a super place.
Definitely a place to visit - again and again.

Hi, we are from Dallas, I went to that nice place ‘ cause the excellent views I was with my kiddos and their papa, that was last Sunday the 30th in the evening.
I did not get the table a wanted, they just decided where to seated you. I don’t like that. And when we ask the waitress she was like not, I already ordered the food, I think that is not a good excuse. You go to a place to pay whatever you can or want to spend, you seat wherever you want to, if it’s possible and that day was possible, if she had helped me to get the table I wanted, Anyway I could had gave her tip too.
Well we ordered pork chops it was very good.
I ordered 14oz seared buffalo ribeye and it was tasty but hard, I have had better buffalo’s dishes, and it didn’t came on the cast-iron.
My daughter order the Jumbo lump crab from the appetizer list and it wasn’t good at all, Hilton Restaurants does serve best crabs appetizers, loved them.
2nd baby girl ordered the wild caught salmon It was good.
The sides were so good and very fresh, the little one ordered chicken strips, he said those were good, is not a place to be eating chicken strips, but he did not wanted anything else, sadly.
The service let’s say ok, they are trying, they were too busy even the place doesn’t have many costumers. Because it was almost closing time.
It’s a nice place, has an incredible view, I love rooftop bars and restaurants and in open spaces rooftops
The drinks at the bar were very good! Loved them, the bartenders were great, good service! My recommendation is to make reservation.even that weren’t a lot people they make us to wait till they gave us a table, that’s why we were waiting in the bar and having drinks.
They had exclusive liquors that you don’t find easily anywhere that was awesome!

Very nice looking restaurant on the 20th floor of the Omni Hotel. We were informed this is the only 4 star restaurant in Corpus Christi. Overall our meal was OK. The bread provided before the meal was good. We ordered the shrimp cocktail appetizer which was also good. 5 large shrimp with a very decent cocktail sauce. I ordered the filet surf and turf special which came Oscar style and with 3 grilled shrimp. The filet was tasty and cooked well, the shrimp were just okay and the Oscar style was pretty sad. Just a tiny pinch of crab meat with 3 asparagus and barely a drizzle of sauce. I was excited but was pretty disappointed for $78, I should have just ordered the filet. My husband got the rack of lamb which he said was very good. Our dessert was terrible. Obviously frozen cakes gotten elsewhere and freezer burnt taste. We didn’t have any drinks and our bill was over $200. Our waiter seemed like he really hated his job and we were seated right outside the kitchen entrance which wasn’t great for a romantic date. We had reservations so I assumed they would have done better on the seating arrangement. I’ve eaten at several 4 star restaurants before and this place just misses the mark. Nice views but the food isn’t worth coming back for.

We specifically chose this place for a birthday celebration because it is fancy and there is a dress code. The couple checking in before us was in their workout gear and they were seated so that was disappointing. At least they were seated far from us. Despite that, our food was delicious. Took a long time to get our steaks. Mine was undercooked and my boyfriend's was overcooked. Since we were starving and not that particular we ate them and enjoyed them because they were so flavorful. This experience could have been so much better. I might give it one more try.

First time dining in here. Christina took care of us. Service was superb. Foods were excellent. We got what we requested, seats with a view. Nice not to worry where we needed to park, valet parking is so convenient. We will absolutely return next time we come to visit CC.

The atmosphere, piano music and drinks here are so delicious, try their new mustang island martini it’s so good! They add coconut flakes on top! They have great dessert as well.

I ate at this place about 10 years ago and it was amazing. But that is not the case now a days. We waited 90 min for our food, we had reservations, ordered as soon as we sat down, all to get our food super cold. Wait staff didn't check on us, didn't give us updates. Manager never came to check on us. It was my date's first time in Corpus Christi and between the Hotel and this restaurant it was the worst experience we have ever had. We only stayed at this hotel for this restaurant and the view and good reviews by me. It is not what it is used to be, you would be better off at a Red Lobster. All we ordered was Pork Chops, 8oz Fliet and bake potato. We just walked out because it was so bad. It was that or ask them to microwave our dinner. It ruined the night because by 9pm and us getting our valet back there was no time to eat anywhere else except Whataburger on a Sunday night. We will never eat here again.

Our food and server were amazing! Unfortunately, the hostess and night manager were very rude and basically told my party we were not as important as another group, which is why they were seated ahead of us. Absolutely unbelievable! Really put a damper on the entire evening!

We had a wonderful dinner and our server was the best! The views are as lovely as the entire staff. I was very pleased!

I must say after reading some of the prior reviews about delays in service we had concerns about keeping our reservation. We decided to try it any way. Our waiter, Robert was pleasant, knowledgeable, and appropriately attentive to not only our table but to other tables he served. He timed serving our drinks and appetizers to match the beautiful sunset, and continued attentive to when he reappeared at our table to take dinner orders. The presentation of appetizers and dinner were excellent We took Robert's advice and we were not disappointed in both the scollop and the ahi appetizers. They were out of the fresh fish entree that I wanted to order having looked over the menu prior (Robert alerted us at our seating) and was pleasantly surprised at the Ahi! The blend of the green curry and soy reduction paired beautifully to complete the fresh taste and aroma of the Ahi. Hats off tho the kitchen. I do agree with a prior review that the restaurant decor is a bit dated; and I'd strongly suggest the OMI address this need to freshen up the space; however, with the multiple levels, placement of the bar and live entertainment at the entrance area, and the sunset view, you can overlook this issue.

Dr8nks and salad were good. Ordered my dinner at 7: 45. Left at 8: 25 without my dinner. Last thing i want to hear is, "Sorry we're really busy. " Everyone around me had eaten and were leaving. The people on lower floor I sat as I watched them have appetizers and dinner, yet there I sat. Paid my bill, food still was not ready, and left. Even if everyone in that place had a steak still would not have taken that long.

Dinner here is amazing the food is better then expected and the view is amazing. I would recommend getting reservations for 6-7 so when you get seated and get dinner you can watch the sunset. It was a very nice experience.
