In this little community that inhabits no more than 1100 residents you will find a tiny BBQ outlet, opened only on Saturdays that in all its smallness has the biggest name in BBQ today: Snow’s BBQ.

Back in the 90’s founder and owner Kerry Bexley knew that the town of Lexington lacked a local go to place for quality BBQ. In the Lexington community BBQ on Saturday was already a tradition set in stone.

From 2003 till 2008 Kerry and Tootsie were mostly serving their smoked meats to locals and auction visitors. This all changed when Texas Monthly named Snow’s BBQ “Best BBQ in Texas”. This placed the small outlet with blinking lights on the radar of all who loved traditional BBQ.

The locals were all of a sudden joined in line by people from out of state and even from other countries that had read the article, seen the number one position and were very eager to try the best of the best. The line lengthened but the quality remained. Snow’s BBQ managed to keep pole position from 2008 till 2013. From 2013 till 2017 they were passed by Aaron Franklin from Austin but regained their number one status in 2017 and have kept this honor till today.

In the Snow’s BBQ cooking area, you will find two types of BBQ pits. There are the well known offset smokers with their heavy doors and characteristic counterweights used for cooking brisket and pork spareribs. They are found in the back of the cooking area and can be seen in action whilst eating alongside them on the covered patio. The other pits are custom built direct-heat pits that I’ve only seen in Texas. Meat slowly cooks on the grates 30 inches above the bed of hot coals allowing the fat to render out, dripping on the hot coals releasing small bursts of flavor explosions each time a drop of fat hits an ember, sending aromatic arrows right back up to the meat. Because of the distance between meat, fire and the controlled environment due to the lids on the pits, flare ups or grease fires are something Tootsie has no worries about. Temperature control is based purely on Toostie’s experience since the pits don’t have a thermometer.

What makes Snow’s BBQ so special? Texas BBQ on its own is known for its no fuss BBQ. Salt, pepper, meat and fire, that’s it. No sauces or frills to distract or cover up mistakes made in the pit. Ok, Snow’s BBQ adds a fifth element to their BBQ repertoire: a mopping sauce used on some of their meats keeps things moist in their pits. What you will find on their menu covers the BBQ staples found throughout most of Texas these days: brisket, pork spareribs, chicken, turkey breast, two types of sausages and a pork shoulder steak. The pork steak is a signature item rarely seen in other BBQ-restaurants. This two to three inch thick cut from the pork shoulder is seasoned with nothing but salt and coarse ground black pepper and slow smoked over a hot bed of coals.

Every now-and-then it gets mopped with a liquid that only Tootsie knows the exact ingredients of. It is rumored to be made with water, onions, butter, Worcestershire, and mustard. Come to think of it, it is quite remarkable that in beef loving Texas a BBQ joint whose signature item is made of pork reigns the rankings. Regardless of your menu choices, you are guaranteed to sink your teeth in BBQ goodness. The sausages have that perfect snap and smoke infusion, the brisket is moist, tender and bold in flavor, even the challenging turkey breast drips of moisture and subtlety. It’s the fact that each and every item on their menu consistently embodies perfect BBQ that they rightfully carry their claim to provide Texas best all-round BBQ and you should join the line to experience it yourself.

Snow’s BBQ serves one of the best briskets in Texas. My group arrived around 5am and didn’t eat till around 1130. Definitely loved that they have an open bar serving up drinks while you wait in line. We ordered everything from the menu. The best meats were the brisket and pork ribs. I don’t recommend the sausage very very dry and lacking in flavor.

Woke up at 2am and arrived there about 4am, we got to be 70th in line and it was such an experience! If you plan to go, take chairs to sit and pack snacks and drinks. Around 7: 30am Kerry came out do raffles for multiple prizes then the gift shop and free bar opened. We didn’t eat till about 11am. Everything was so delicious and well WORTH the wait! We even got a picture with Miss Toostie and Terry! If you haven’t gone, plan a trip ASAP! Best BBQ I’ve had in my life! This trip has been one for the books!

Worth the drive and the line. Definitely among the best barbeque I’ve ever had. Tootsie, Kerry, and the pitmasters are very friendly and available for photos or a chat.

Ordered three items delivered out of state. Had the pork steak tonight, all we can say is wow, melts in your mouth and seasoned perfectly! Ribs and sausage were the bomb! Just order more for a summer feast.

Sadly it was not worth waking up at 3: 30am to drive 3hrs and to wait for 4 hrs in line. The brisket was dry and so was the jalapeño sausage. The chicken however was a 8/10 but it still didn’t make up for it. We booked our trip to Texas specifically to try snows bbq: (

Came here I believe last year for the birthday party event. I ended up winning a raffle for some barbecue sauce which was awesome. After waiting, we got our food and began eating. The food was absolutely delicious but unfortunately it was so good that I forgot to fully chew a piece of brisket and started choking. I’ve never choked like that before (I was able to breathe a super tiny bit but nowhere near enough) so it was terrifying but the staff was really awesome and took me back into an employee area to help me get the piece of brisket dislodged and made sure I was ok after. I will say I’m now traumatized from brisket and haven’t had it since (lol) BUT just know the employees take care of you here 10/10 recommend & sorry if I took the attention away from you on your big day Ms. Tootsie! Lol

The hype is real and well deserved. Waited about 4.5 hours. It was well worth it. The time flew by. The ribs may be the best I've ever had. The turkey was to die for. The atmosphere was amazing. I had a chance to chat with Kerry, the owner, and Ms. Tootsie, the pit master. They do BBQ right. The staff was so friendly and efficient. Yes, they are only open on Saturday. Make plans. Get there early. Based on what I could tell, 5: 00 am seems like a good time to get there. I did meet someone there who got in line at 10: 00 pm the night before. He was first in line. Go!

Got lucky with the rain and barely a line on may 13th. Flew in from Denver to finally try this famous bbq place. Did not disappoint. Unbelievably delicious. Might need to fly in more often!

Tootsie is a living legend with good reason. She surely does “smoke the good stuff”. It was an honor to make her “Texas Salad” my breakfast.
We got on the road from Austin at 4: 30am. We were numbers 48 and 49 in line.
It was an amazing experience with a friend. I love Texas. I love bbq. This trip and place make easy to remember why.

Our family got to Snow's at 4 am.and found ourselves in the 50th spot in line. The weather was great, so sitting outside was nice. People watching was great and our neighbors in line were very nice. The owner of Snow's, Kerry, would come out and randomly pick customers from the line and give them prizes. The line started moving around 7: 30 am, we ate BBQ at 9: 00 am. We bought brisket, half a chicken, and jalapeño sausage. We also bought potato salad for our side. The winner for us was the jalapeño sausage, chicken second with brisket coming last. The potato salad was good with a sweetness to it. Overall it was a fun experience and I would do it again. Thanks to all the staff at Snow's for new memories. "Long live Tootsie! "

Snow's in the real deal! After seeing all the features on Mr. Kerry and Mrs. Tootsie, we had high expectations and they were exceeded. It was a VERY wet day, with rain falling overnight nonstop. We arrived at 625am and were in line as number 95-100, which we knew because Mr. Kerry came out to do the raffles you see on those documentaries. After a few numbers were called, he called #100, which was my daughter, who happens to be in a wheelchair right now following a major leg surgery. She chose skip the line by 50 and he allowed the 6 of us in our party to all go. He did ask that I buy a Snow's hat to replacement the Longhorn one I was wearing (and later explained that he's only an A&M fan because his two step daughters went to A&M) and I happily obliged.
The care the staff showed my daughter and our party was unheard of. They allowed us to roll her out of the rain and explained that if there was a demand for the table she was at, they would move her. They insisted we used their private bathroom for her and then when the demand did surpass the supply of tables, they insisted we sit in their private VIP table inside! We were treated like celebrities, each of the staff coming by to offer us drinks, take pics, check on us, etc.
We tried all the proteins on the menu and they exceeded our expectations. Brisket was so tender that it melted in your mouth. The chicken was the best we have ever had. The pork steak was INCREDIBLE! The turkey and ribs were delicious and while the texture of the sausage wasn't our favorite, the flavors were delicious.
As we sat inside, Mr. Kerry came back and visited with us. We asked about his start in BBQ, his previous career, where he got his brisket from, how much they ship and how often they smoke. He shared everything. It was like we were old friends. We thanked him for the incredible hospitality and he explained that is what was required from all of us staff.hospitality is free, he said!
It was a really memorable day and we are so very grateful for the experience! Can't wait to go back!

I received a brisket as a Christmas present and tonight I finally quartered it and cooked a portion. It was by far the best brisket I've ever had. As tender as pulled pork with a great smoky flavor. Nothing like this in NJ. The whole house smells like a BBQ joint now and I'm going to be sad when it's all gone. Keep up the good work.

After a week of eating nothing but BBQ this was the best. We got there at 5.45 am and fortunately the queue was not that long. The doors opened at 7.30am and we waited another 45 minutes to get served. We has the Brisket, the chicken, the ribs, the pulled pork and the pork steaks, all was good. Its a lovely location and I had my photo taken with the lovely Tootsie.
